Two years ago when I discovered my love for baking, I tried to bake cookies from scratch and it was a total failure. So I thought maybe cookies aren’t something I’m good at baking, and ever since then I haven’t tried until a few days ago. Because we’re only 4 days away from Christmas day, it’s only right to make Christmas baked goodies. So as always, I googled cookies recipe and picked one randomly hoping it’d be as yummy as my tummy wishes it to be. Luckily, this recipe I came across did score some delicious cookies in my tummy, and a place in my recipe box.
YOU WILL NEED…
1) 1 cup butter, softened
2) 1 cup confectioners’ sugar
3) 1 egg
4) 1 ½ tsp almond extract
5) 1 tsp vanilla extract
6) 2 ½ cups all-purpose flour
7) 1 tsp salt
8) Gingerbread Man cookie cutter
In a large bowl, add butter and confectioners’ sugar then mix them together until light and fluffy. Add to it eggs and extracts then beat them in mixture. Combine flour and salt then add them to the creamed mixture and mix really well. Leave the mixture to chill for 1 to 2 hours. When I got to this step, I left the mixture to chill for 2 hours in the fridge and when it was time to take it out, the dough was as hard as a rock! I had to wait another 5 hours for the dough to lose its rigidity. So maybe don’t wait two full hours, or even put the dough in the fridge in the first place…
Once the time is up, preheat the oven to 375⁰ while you shape your cookies. On a lightly floured surface, roll dough to 1/8 in thickness then cut with a floured cookie cutter. Place your gingerbread men shaped cookies on greased baking sheets. Put the cookies in the oven and bake them for 7-9 minutes or until lightly browned.
Now the cherry on top of every baking recipe that I missed on this time is decorations! Since they’re gingerbread men cookies, you could either spread melted chocolate over the whole thing and just shape the eyes and mouth, or draw the eyes, mouth and buttons using frosting. Unfortunately, I couldn’t decorate my cookies as I’m currently having my final exams so I missed out on my favorite part of the recipe. However, my cookies still turned out to be so delicious; they were literally gone in less than 24 hours.
